Melting Moments with Rewarding Times

Getting ready for The Cake Cafe Rewarding Times baking class tomorrow. There are 100 people signed up so it should be a busy and fun day. 

These Orange Melting Moments have definately got the go ahead for the class....

My neighbour's grandmother was a great baker and one of my favorite things that she baked where melting moments.  They were fat little cookies, sandwiched together with a coffee butter cream, the orange cookies featured here are adapted from those melting moments. So thank you Mrs White for all the great cookies and for the inspiration. The corn-flour in the dough helps give it that light and brittle texture. They are entirely egg free so they are great for people who can not eat eggs.

Orange Melting Moments

You will need: A mixer or a whisk, a baking tray, a fork, a wire rack and an oven

220 g ( 8 oz )  butter
110 g ( 4 oz ) icing sugar
zest of 2 oranges
220g ( 8 oz ) flour
55g ( 2 oz ) corn flour
a large pinch of salt

Put your oven to 160

Cream your butter and sugar until they are pale in colour.

Meanwhile sieve your flour, corn-flour and salt.  Add these ingredients and the orange zest to your butter and sugar.  I find it best to combine all of these with my hands until they form a dough.

Roll your dough into walnut sized balls and place on a baking tray lined with parchment. Press each ball with the back of a fork or spoon and place your tray into the oven and bake for 15 minutes.

Leave to cool for a few moments when they come out of the oven then transfer them onto a wire rack.

Apple and ginger

1/4 inch piece of ginger grated

1/2 tsp of honey

cloudy apple juice

1/2 a cup of ice


Blitz everything together with your blender.


melon iced treat

the juice of 2 oranges

1/4 inch of ginger grated

1/4 of a small melon, seeds removed

1/2 cup of ice

Blitz everything together with your blender.


Limeade

3 cups of water

1 cup of lime juice

1 tbs of honey

1/2 cup of ice


Blitz everything together with your blender.

strawberry milk shake

1/2 a cup of strawberries or another berry

1/2 a cup of milk

1/2 a cup of ice

1 tsp of vanilla essence


Blitz all of the ingredients together


mango and pistachio

1 mango, peeled and chopped

1/2 a cup of milk

1/2 a cup of ice

a small handful of pistachio nuts, chopped


Blitz the mango, milk and ice. Taste it and add a little honey if the mango was bitter.


Pour into a glass and sprinkle with the nuts.

Date shake

1/2 a cup of plain yogurt

1/2 a cup of milk

1/4 cup of soft dates

1/2 a cup of ice

a sprinkle of crunchy granola

 

Add the yogurt, milk, dates and ice into the blender and blitz well. Taste and add more of any of the ingredients or a little honey if you would like it sweeter.


Chocolate treat

1 banana

1/2 a cup of milk

1/2 a cup of ice

1 tbs of coco powder

 

Blitz all of the ingredients together. Taste and add some honey if you wish. A spoon of nutella chocolate spread also works instead of the coco powder.
