Courgette Cake from The Sean O'Rourke Show RTE

80g of raisins

330g of courgettes

3 medium eggs

165g of oil

200g of caster sugar

300g of self raising flour

3/4 tsp of baking powder

3/4 tsp of baking soda

 

Cover the raisins in warm water

 

Line a nine inch tin and heat your oven to 180 degrees

Grate the courgette with a medium sized grater

Mix the eggs, oil and sugar in a bowl until creamy

Sieve the flour and raising agents into the bowl

Drain the raisins

Stir in the courgette and raisins

Fill you lined tin and place into the oven. Bake for 35 minutes until baked through

 

200g of cream cheese

2 tsp of honey

1 tsp of lemon juice and zest of a lemon

1 drop of vanilla extract

 

Mix all of the ingredients together until smooth

Lemons, juice and zest

Eggs, lightly beaten

Caster sugar

450 g

butter

110g

 

To make the curd; add the lemon juice, zest, eggs, sugar and butter into a heat resistant bowl.

Place the bowl over another larger saucepan that is filled with water. Bring to a gentle boil whisking all of the time. Make sure not to overheat as it will begin to curdle.

 

Remove the curd from the heat once it has started to thicken and coats the back of a spoon with ease. Set aside to cool.

Concrete Tiki

CONCRETE TIKI sets out to reflect a current atmosphere of collaboration between food and art. Fiona Hallinan and Michelle Darmody have created a programme of food events and workshops for IMMA to sit within a larger series of activities throughout the Summer Rising Festival. A specially commissioned structure by artists Daniel Tuomey and Tom Watt will serve as the location for The Hare and Cake Café, this structure gave the programme its name, and it will later serve as the venue for other projects.
